Le Cordon Bleu Ottawa: Culinary Arts / Food Prep / Service Area of Study

Cuisine Superieure - Certificate

In the Superior Cuisine program you will learn about the current evolution of French cuisine. Full menus, demonstrated by the chefs, are inspired by trends from today's top kitchens. Some recipes are original; others are contemporary interpretations of the classics you already know. The ingredients are richer and more refined : you will be working with foie gras, truffles and lobster. Now well-versed in French culinary skills, you are encouraged in Superior Cuisine to be more creative in both taste and presentation. An internship component in Signatures restaurant allows students to shadow a professional kitchen brigade and experience the intricacies of consistently reproducing a gastronomic menu.You will also be required to prepare technical dishes, based on compulsory dishes used in major competitions such as the 'Meilleur ouvrier de France', the highest honour bestowed on culinary professionals in France. You will put the last touches on the Superior Cuisine program by presenting an original dish, based on a mystery basket of ingredients.

Course Breakdown

Course fees: $9,175.00 CAD

Non-refundable application fee: $500.00 CAD

Course fees includes, tuition, all learning materials and student activities fees.

Course Duration:

The Standard session is 11 weeks. It includes 10 weeks of classes plus 1 week of exams and graduation.
